Winter 2011

WELCOME … from Rebekah

Hi all,

Glorious winter is officially here! Autumn offered us nearly not a sunny or dry day this year, a very different story from last year. The farm has already had so much of ‘the-wet-stuff”, and the hills in the Fleurieu Peninsula, are a-wash with the loveliest collage of green. Venture further north to McLaren Vale, and the leaves are falling, venture east to Langhorne Creek and autumn colours abound. We won’t mention the word ‘vintage’ as the local wine industry have struggled to get many crops in with all the rain & spoilage during the summer and autumn rains. Still, as a family of dairy farmers, this has been one of the best seasons we can remember. It is so wonderful to have finally seen the beginning of a good growing season. The up-side, has been the growth of the highly nutritious green grass and our jersey cows continue to munch on this nutritious fodder helping us to make rich, creamy, delicious, award winning jersey cheese.

In mid February, the team at Alexandrina Cheese Company were again able to wave the Australian flag at the Oceanic Jersey Cheese Awards, held in Hamilton, New Zealand. At this event, the McCauls won Gold for their Encounter Bay Edam and Alexandrina Vintage Cheddar; Silver for the Fleurieu Feta and Mt Magnificent Gouda, and Bronze for the James Flat Pepato; hence, we are still madly flying the Australian flag for all to see. The most exciting buzz around Alexandrina Cheese Company, is the news of a winter Art Exhibition titled "Warming up for Winter". The launch is on Sunday July 3, so be sure to call into see us at The Cheesery (Sneyd Road, Mt Jagged) in the late afternoon for a glass of local wine to toast the talented Karen Hammat of Yankalilla Yarns, and works by Emanda Fretwell also of Yankalilla. The exhibition will feature paintings by both artists, but Hammat also spins and dyes her own wool and makes wonderful hats and beanies. We will all be ready for the colder months ahead. Join us for live music on the third SUNDAY of the month in Spring SUNDAY 18 September, SUNDAY 9 October (second Sunday) & SUNDAY 20 November The music always starts at 1pm, featuring local folk musicians “The Ryebuck Sheilas”.

FiddlesThis band pull together four talented Fleurieu Peninsula based folk artists to play a sweep of traditional folk songs. You will hear violin, guitar, mandolin, and amazing voices!

It is flaming good musical fun! Join us at Alexandrina Cheese for a warm and toasty autumnal afternoon, and relax on our new outdoor seating under the new verandah.

The Mt Compass Jersey Cattle Club celebrated their 46th year this year, and its members were thrilled to be host the National Jersey Australia Conference & AGM, which commenced the week of 16 May 2011. The conference venue was set in and around the beautiful Fleurieu Peninsula. All conference participants were be able to encounter South Australia's best Jersey breeders, and participants had three action packed days including the Annual Heifer Competition judged by friendly Tasmanian, Mr Geoff Heazlewood. The conference also included a Presentation Dinner at Currency Creek Winery, a Stud Tour of Nyowee Jereseys of Mt Jagged, a Formal Dinner at McCracken Country Club, and a scenic regional tour including a tour of Mundoo Island, among other local food and wine attractions.

In the Season ... Winter

Marinated in an oil marinade.
250 gm marinated tubs;
Available in 1 kg & 3 kg buckets by order only.

Marinated feta is a firm, light, creamy cow's milk feta transferred from the brine into a marinade, and infused with either chilli (or our other flavour is infused with mustard seeds). Ideally this cheese is best used on an antipasto plate, served with good sour dough bread, local kalamata olives, and any condiments. Another suggestion for the winter months is to prepare a meat stuffed with marinated feta, one suggestion is to stuff it inside a chicken breast before roasting in the oven. The results is a delicious infused meat, which can turn any week night dinner into a master piece. Many chefs on the Fleurieu Peninsula use it simply to pep up a fresh salad.

Recipe of the Season
Crème Fraîche Toffee Cake

Recipe SERVES 10 - 12
This recipe first appeared in Mark Peel &
Nancy Silverton at Home (Warner Books, 1994), and has been adapted by
Alexandrina Cheese Company.

Crème Fraîche Toffee Cake

Ingredients:

FOR THE TOPPING
1 cup pecans
1/4 cup light brown sugar, lightly packed
plus 2 tablespoons light brown sugar, lightly packed
2 teaspoons ground cinnamon

FOR THE CAKE
2 extra-large free range eggs
2 cups Alexandrina Crème Fraîche (or sour cream)
1 tablespoon pure vanilla extract
8 ounces unsalted butter, chilled and cut into 1'' cubes
1 tablespoon chopped lemon zest (about 1 lemon)
1 tablespoon baking powder
1/2 tsp. salt
2 cups granulated sugar
3 cups unbleached pastry flour or unbleached all-purpose flour

Method:

1. Adjust the oven rack to the middle position, and preheat the oven to 325°. Lightly coat a 10'' 14-cup-capacity bundt pan with melted butter.

2. For the topping: Spread the pecans on a baking sheet, and toast in the oven until lightly browned, 10-12 minutes. Shake the pan halfway through to ensure that the nuts toast evenly. Cool, and chop coarsely. In a small bowl, combine the nuts with the brown sugar and cinnamon, and set aside.

3. Turn the oven up to 350°. In a small bowl, whisk together the eggs, Alexandrina crème fraîche (or sour cream), and vanilla extract.

4. In the bowl of an electric mixer fitted with the paddle attachment, cream the butter, lemon zest, baking powder, and salt on low until softened, 2-3 minutes. Add the sugar, and turn the mixer up to medium for 3-4 minutes, until light and fluffy, scraping down the sides of the bowl as needed. Turn the mixer to low, add the egg mixture, a few tablespoons at a time, and mix until incorporated.

5. Add the flour to the butter mixture in 3 batches, turning the mixer off before each addition and mixing on low until just combined.

6. Pour half of the batter into the prepared pan, and spread evenly. Sprinkle half of the topping over the surface, and pour the remaining batter over it, spreading evenly. Sprinkle the surface with the remaining topping. Bake until firm to the touch, about 1 hour.
