Cherry Gratin served with Alexandrina Honey Yoghurt


Our Cherry Gratin is a wonderful dessert, which most often I bring warm to the table.

At this time of year I like to use preserved cherries, but of course in Summer it is best with fresh pitted Cherries.

Your family will definitely love it, and just to add a little freshness we dollop a spoon or two of chilled Honey Yoghurt on top.

It’s proper name is a Cherry Clafoutis, that’s the French name.

Cherry Gratin, served with Alexandrina Honey Yoghurt


On the day, you will need 25 minutes preparation time, total cooking time 25 - 30 minutes 

Serves 4


500 gm (1lb) local ripe cherries (or use preserved cherries)

1/2 cup (125 gm) Alexandrina Crème Fraiche (sour cream)

1/2 cup (125 gm) Alexandrina Pure Jersey Cream

1/2 cup (125 ml) Alexandrina Full Cream Jersey Milk

2 egg yolks

½ cup self raising flour

½ cup almond meal  

2 Tbsp caster sugar


1 Tbsp brown sugar, to brown top of gratin


To serve you may use Alexandrina Honey Yoghurt



pre heat the oven to 180 degrees C.

remove the stems and stones from cherries (unless you are using pitted preserved cherries)

arrange the cherries in a shallow heatproof dish. 

combine crème fraiche, cream and milk in a saucepan and heat the mixture gently, until simmering point

once you see the beginning of the mixture come to the boil, take the pan off the heat immediately. 

shortly afterwards, in a second medium heatproof bowl, whisk egg yolks together with caster sugar until thick and pale

then quickly incorporate the flour and almond meal 

shortly afterwards, pour in the warm-creamy-mixture, gradually whisking both until combined

pour the combined mixture into the shallow heatproof dish, and simply pour over the cherries

bake for 25-30 minutes

to serve, sprinkle soft brown sugar evenly over the surface

you may like to gently place the dessert under a hot grill until the top is browned and just bubbles, put the timer on for 1 minute.

Alexandrina’s Honey Yoghurt is a continental style honey yoghurt which uses a special blend of honey from a local Mount Jagged apiarist.  This yoghurt is pot set, and made with pasteurised Pure Jersey Milk, and incubated and fermented with probiotic cultures. It's creamy, slightly-sweet, delicate consistency makes it the perfect accompaniment to breakfast cereal, fresh fruit or a healthy dessert. 

2.2 % minimum fat | available in 500 ml tub.
