Alexandrina Broadbean Shakshuka served with Alexandrina Chilli Cheddar
Our new hens are laying twelve eggs a day, so this is an excellent recipe to bring to the Spring table, and you can certainly add more than four eggs to this Shakshuka. With new season tomatoes hitting the shelves, it is timely to make sure you have these on hand for both a quick dinner, or a weekend brunch. We layer this Broadbean Shakshuka with simple ingredients and top with lashings of Alexandrina Cheese.
ALEXANDRINA BROADBEAN SHAKSHUKA SERVED WTIH ALEXANDRINA CHILLI CHEDDAR

Serves 2-4
Groundwork, 10 minutes to prepare, 10-15 minutes to cook on stovetop (or choose to bake it in the oven)
ELEMENTS
- 125 g Alexandrina Chilli Cheddar, grated
- 1 tablespoon of olive oil, if you like more add more
- 1 brown onion, coarsely diced
- 150 g broad beans (we had frozen a small portion for this recipe ahead of time, so either fresh or frozen is fine)
- 2-3 cloves of garlic, crushed
- 1 teaspoon of chilli flakes
- ½ teaspoon of salt
- 200 g cherry tomatoes, chopped in half, lengthways
- 400g x can of diced tomato
- 4 free range eggs, (however if you have an abundance you could always add 8 eggs)
- black pepper to finish
- pinch of allspice also to finish
- serve with warm toast or warm flatbread
TECHNIQUE
you may preheat oven to 170C, if you would like to keep this warm in the oven before serving
- heat a large frying pan on medium heat on the stove, add the olive oil and coarsely diced onion, and let this saute together until soft for 5 minutes.
- turn this down slightly, and once you are satisfied the onion is cooked, add the broad beans, garlic and chilli to the frying pan. Cook for another 4 minutes or so.
- add both the chopped tomatoes and canned tomatoes now, stir the mixture, and reduce the heat to the lowest setting.
- use a spoon to make a four little spaces in the mixture, and crack each egg, one by one, and then pour each egg into the pan, in the little space you have created. Cook the eggs to your preference – whites need to be set, but the yolks can be quite runny.
- while the pan is still warm, grate 125 g Alexandrina Chilli Cheddar, and place on op of each egg, and some suggest to generously cover the dish with Alexandrina Chilli Cheddar. We suggest you measure with you heart, and apply as generously as you wish!
- you may like to pop this frypan in the oven for further cooking, and heating before you serve, the choice is yours. We like to do this! You can also warm the plates, but use oven mittens to retrieve!
- sprinkle pepper and a pinch of allspice to finish
- serve with a Spring smile

Top Tip | You can also serve with extra herbs, parsley, microgreens, spring onions and flatbread. You may also included any other season vegetables, including asparagus or broccoli, or leafy kale.
More cheese? Use Fleurieu Feta instead or sprinkle some Alexandrina Fresh Cheddar Curd or Fresh Cheddar Curd Chilli flavour would be an excellent addition to the shakshuka!!
