Position Description

Our team is responsible for the production of Edam, Gouda, Cheddar, Romano, Pepato and Feta cheeses, ensuring accuracy of the manufacturing process. Our team manage ingredients, cellaring, packaging and dispatch, so that our cheeses look their best when they go out to our customers. 

This is a key role in supporting the production and wholesale team, with set targets for accuracy and speed. Full training is given and during the Probationary period of 12 weeks, performance will be supported and measured. 

Other duties will include supporting our HACCP program with close attention to cleaning, hygiene and food safety procedures being vital at all times. 

In addition, the role is a key support to the production team and will learn all cheesemaking processes and standards. 

At all times there is a need to follow company procedures with regard for the highest standards of food hygiene.

JOB TITLE: Cheesemaker / Food Production Assistant
REPORTING TO: Cheesemaker / Supervisor

You will be assisting the Cheesemaker as the Food Production Assistant with the whole process of cheese making including cleaning & cheese store work following HACCP Quality Assurance systems.

Cheesemaker / Food Production Assistant 
  • 4-5 days per week, 8am until 4pm. 
  • Pay as per Australian Award MA000073 Level 1.
  • Working in a South Australian owned & operated family business. 
  • Alexandrina Cheese Company is situated on the Fleurieu Peninsula of South Australia, between Mt Compass and Victor Harbor.
  • Previous experience in the Food Industry is considered favourably.
Role Description 
  • working in Cheese Manufacturing Production room.
  • HACCP environment.
  • physical job involving all facets of cheesemaking.
  • involving many & varied tasks in production room.
  • making a variety of cheeses.
  • in-House training of traditional cheese making, while assisting.
  • learning Standard Operating Procedures (SOP) and Manufacturing Operating Procedures (MOP).
  • commencing as Casual Position, with training; 12 weeks probation.
Roles & Responsibilities 
  • assist cheesemaker during production day.
  • assist in preparing the production room for cheese making. 
  • assist with the cleaning equipment before and after make. 
  • maintain a high level of personal and workplace cleanliness. 
  • produce and package food safe-ready to eat dairy and cheese products. 
  • wax, cut and prepare cheese for sale. 
  • maintain cheese room cleanliness and organisation.

Tasks will include
  • working in production room, milling, hooping, un-hooping.
  • preparing hoops
  • pasteurisation and separation
  • quality checks
  • daily store duties, turning cheese
  • brine work
  • wax work 
  • applying best before date 
  • record keeping
  • batch control
  • may include wrapping, boxing and dispatching our speciality cheeses.
  • cheese sensory evaluation / tasting. 
  • daily/weekly/monthly cleaning to work towards our Dairy Safe audit, twice per annum.

Skills Required 
  • manually dexterous and able to lift and move heavy equipment.

Food Safety Training "Do Food Safety" Certificate and knowledge or experience of the Dairy or Food Industry would be considered favourably.
