This week we are featuring this very simple dessert, and the best part is this Edible Wreath can be made ahead of time, and only needs dark chocolate for the finishing touches!

Alexandrina Coffee Semi Freddo made with Alexandrina Pure Jersey Cream


This elegant dessert is easy to slice straight from the freezer. A dessert made with rich, velvety Pure Jersey Cream to finish of any holiday dinner party with a bit of a jolt -!



on the day, you will need 20 minutes preparation time, total freezing time, usually overnight

serves: 8-10



¼ cup espresso coffee, chilled (or optional 1 Tbsp instant coffee)

1 tbsp Australian brandy

4 large eggs

100g golden caster sugar

300ml pot Alexandrina Pure Jersey Cream

100g/4oz pack Toblerone, finely chopped

dark chocolate, for garnish



oil and line a 1-litre tin with cling film. Put the cold espresso coffee, brandy, egg yolks and sugar in a bowl and stir to dissolve. Put the egg whites in a large bowl and put the cream in another.

beat the egg whites until stiff with an electric whisk. Then quickly beat the egg mixture until thick.

don’t beat the Alexandrina Cream – it will hold its shape if you gently fold the cream into the egg mixture. Then carefully fold in the whites, then fold through the Toblerone and tip into the mould / tin.

lightly cover the surface with cling film. When frozen, overwrap in foil and freeze. This will keep for up to 6 weeks in the freezer.

plating up | to serve, unwrap and turn onto a platter. Strip off the cling film and serve topped with pre prepared chocolate curls.

Top Tip | Use 8 – 10 silicon moulds to make individual semi freddo portions, this will make it easier for plating up too. You can make chocolate curls ahead of time and keep them in an airtight container or freeze.

Foodie Fact | Caster sugar is used in cooking because the finer granules dissolve quickly. If you are caught without any in your pantry make your own by simply whizzing some sugar cubes or granulated sugar in a food process until powdery.
