Alexandrina Fruity Tuity Rice Salad, served with Alexandrina Feta

Alexandrina Spring Salad Series

This season we are making the most of an easy style of salad preparation, and the reason is that we want to “eat a rainbow” everyday of the week, Alexandrina Fruity Tuity Rice Salad, served with Alexandrina Feta suits as our go to mid-week meal. Any left overs go straight into an adult-size lunch box, add some cooked chicken pieces and any dietitian would approve this meal-prepping hack for anyone with a fast paced life!

Rolling out our Alexandrina Fruity Tuity Salad, and the hero of this Spring salad is our Alexandrina Feta, but honestly you could use any of the Alexandrina Cheeses for this recipe.

You will need  200 g (1 cup) Alexandrina Feta, to be crumbled and 50-75 ml (or ¼ cup) of Alexandrina Crème fraîche for this recipe.

 

Groundwork – 20 minutes of preparation time

Serves 6+ (it is so easy to change quantities for serving more)

Groundwork notes you will spend a short amount of time in preparing all the vegetables, and assembly is quickly done. Dressing less than 5 minutes preparation time.

ALEXANDRINA FRUITY TUITY RICE SALAD, SERVED WITH ALEXANDRINA FETA

Elements

For the Salad

Approximately 200 g (1 cup) for each ingredient but flexibility allows for substitutions.

200 g (1 cup) Alexandrina Feta, to be crumbled

400 g (2 cup) rice, cooked to packet instructions (either brown rice  or white)

200 g (1 cup) carrot, chopped (or grated)

200 g (1 cup) apple, chopped (or grated)

200 g (1 cup) pineapple, chopped

100g (1/2 cup) red capsicum, chopped

50-75 g (1/4 cup) raisons or sultanas

50-75 g (1/4 cup) walnuts

50-75 g (1/4 cup) pinenuts, toasted

 + optional garnish with ¼ cup of spring onions, chopped

 

to make the dressing

50-75 ml (or ¼ cup) of Alexandrina Crème fraîche

50-75 ml (or ¼ cup) of lemon juice

50-75 ml (or ¼ cup) of olive oil

50-75 ml (or ¼ cup) of chutney

2 teaspoons of curry powder (we loved to use Herbie’s)

+ salt and pepper (optional)

The aim is to set aside each salad ingredient in a bowl – paying attention to your mise en place will be extremely therapeutic!

  • prepare the ingredients, combine everything, except the Alexandrina Feta  and mix well.
  • to make the dressing mix Alexandrina Crème fraîche, lemon juice, oilive oil, chutney and curry powder together in a small bowl, and mix with a spoon.
  • sprinkle the Alexandrina Feta, to top of the salad.
  • + optional garnish with ¼ cup of chopped spring onions

DID WE FORGET THE AVOCADO? | You could definitely add avocado to this salad, and we suggest finding Naranja Orchards who grow beautiful Hass avocados and citrus. Peter and Caroline Cobb’s 35 hectare family farm at Nildottie is 100% pesticide and fungicide free. Because they wanted to experiment, the Cobb family have branched out into more exotic citrus. Look out for fragrant Buddha’s hands and kaffir limes during winter. Peter and Caroline are always happy to give advice on which avocados are ready to use now versus those that will ripen in a few days. Ask them for hints on how to cook a Buddha’s hand or the best way to use kaffir lime. Find them outside at the Adelaide Farmers Market every Sunday between July and February. FOODIE FACT | The Australian Dietary Guidelines recommends at least 2.5 serves a day of milk, cheese, yoghurt and/or alternatives for most adults aged 19-50. A serve from the dairy food group is a cup (250ml) of milk, three-quarters of a cup (200g) yoghurt, two slices (40g) of cheese, half a cup (120g) of ricotta cheese or appropriate alternatives. TOP TIP | It is my aim this year to laminate this recipe to stick on the fridge, so that I can empower my children, and quite possibly my husband to abandon other dinner choices at least one day a week. Everyone LOVES this fruity rice salad, so it is going to be a family favourite in no time, and so quick and easy.

CALCIUM HERO OF THE DISH | Alexandrina Fleurieu Feta

Alexandrina's Fleurieu Feta is a light and creamy cow’s milk feta matured in brine. This cheese is made with Skim Jersey Milk which has less than 14.5 % fat. This cheese has creamy zing - it is a firm cutting, versatile feta cheese that can be cubed and tossed through a green salad, or combined with spinach in a crusted pie, or served on an antipasto platter. Serve this cheese | on a platter with kalamata olives, dolmades and pickled octopus. 14.5 % minimum fat | available in various weighted wedges vacuum packed, also available in 500g, 1kg, 3kg tubs. 

TOP TIP 1 | Take the dressing ingredients into a clean repurposed jar and shake the ingredients. store any leftover dressing in the jar in the refrigerator for up to 1-2 days.

PLATING UP | Use an enormous platter to display this lovely rice salad, and make sure you have a bright colour salad servers next to the finished dish.
