ALEXANDRINA MINTY SPRING PEA SOUP – SERVED WITH ALEXANDRINA FINNISS RIVER ROMANO, AND A DOLLOP OF ALEXANDRINA CRÈME FRAÎCHE
Inexpensive, filling and delicious! This Minty Spring Pea Soup – served with a dollop of Alexandrina Crème Fraîche is not complete until you have a light shaving on Grated Romano on top.
Frozen Peas are always on hand here at the homestead, tucked into the bottom drawer of the freezer. We usually find growing peas a little tricky, not because they are difficult to grow, but because you have to grow so many peas to have any decent harvest, and usually all the trouble is not worth the bother! This doesn’t even count the time on the porch for shelling. So, it is one food that enters our home from the frozen section of the supermarket. Of course we always have both Alexandrina Finniss River Romano and Alexandrina Crème Fraîche in our dairy drawer of the refrigerator.
Serves 4-6
ELEMENTS
600 g frozen peas, chopped (3 medium sized zucchini)
300 g potatoes, chopped (3-4 medium sized potatoes)
1 onion, firstly finely sliced, then finally chopped and fried
60 g garlic, crushed (3-4 medium sized cloves)
10 g fresh mint, sliced finely (3-4 medium sized leaves)
400 ml of good quality stock (Note: we have used a pork hock in the past to make a home made ham stock, do this if you have the time)
salt, pepper
to serve
~125ml Alexandrina Crème Fraîche (1/2 cup)
~125ml Alexandrina Grated Romano (1/2 cup)
TECHNIQUE
The aim of this recipe is to prepare each of the ingredients, before assembling all of the ingredients of this soup into a slower cooker (or medium sized saucepan).
To the slow cooker, add all the ingredients, except the stock.
You may use sauté option to fry onion, potato & garlic. Then add the frozen peas.
Mix all the ingredients together, and set to cook for 3-4 hours, depending on the settings on your slow cooker.
To finish this soup use a stick blender to blend the soup into a smooth consistency.
Season to taste with salt and pepper
Serve in a bowl with a large dollop of Alexandrina Crème Fraîche, and tablespoon of Alexandrina Grated Romano.
