Red Wine Beef Stew with Alexandrina Cheesy Dumplings

ALEXANDRINA RED WINE BEEF STEW WITH ALEXANDRINA CHEESY DUMPLINGS

 A hearty beef and red wine stew is hard to beat, particularly when it is topped with cheesy, fluffy dumplings. 

Serves 4 – 6

Groundwork – 25 minutes preparation time + 2 hours simmering + 15 minutes in oven 

elements – beef stew

  • 1 kg beef, chuck steak, trimmed and cut into 4cm pieces
  • 2 tablespoons plain flour
  • 4 tablespoons olive oil 
  • 1 large brown onion, chopped
  • 2 garlic cloves, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • bay leaves, 2 or 3 dried leave, whole
  • 1 cup red wine
  • 400 g can of diced tomatoes, 
  • 2 cups of beef stock 
  • thyme, 2-3 springs
  • fresh leaf parsley, roughly chopped, to serve

technique

  • coat beef in flour, shaking off excess. 
  • heat 1 tablespoon olive oil in casserole dish over medium heat.
  • add half the beef, cook for 5 minutes or until browned all over, transfer to a bowl. 
  • repeat with 1 tablespoon oil and beef, transfer to a bowl.
  • heat remaining oil, add onion, garlic, carrot, celery and bay leaves, cook, stirring occasionally for 6 minutes. 
  • add tomato puree, stock, red wine and thyme, season with salt and pepper, stir to combine.
  • return the beef to the pan, and bring to the boil. After this reduce heat to low. cover with lid. 
  • simmer, stirring occasionally, for 2 hours or until beef is tender.
  • preheat oven to 200C. 
  • meanwhile, make cheesy dumplings: combine flour, polenta, gourmet shredd and baking powder in a bowl, season with salt and pepper.
  • make a well in the centre, add Crème Fraiche and Milk, and mix well to combine. 
  • optional, you can remove the bay leaves and thyme leaves from the stewnow. 
  • place spoonfuls of dumpling mixture over stew, then cover with lid, bake for 15 minutes. 
  • let stand for 5 minutes, serve sprinkled with chopped parsley.
