Alexandrina Welsh Rarebit
Alexandrina Winter Recipes Series
A Rarebit is a traditional Welsh dish made with a savoury sauce of melted cheese and various other ingredients and served hot, after being poured over slices of toasted bread.
Oozy and cheesy – this dish is for all those cheese on toast addicts!
ALEXANDRINA WELSH RAREBIT
makes 4-6 serves

350 g Alexandrina Gourmet Shred, pre grated mix of four cheeses
150 ml Alexandrina Full Cream Pure Jersey Milk
4 tablespoons of plain flour
4 tablespoons of breadcrumbs
1 teaspoon of English mustard powder
1 tablespoon of Worcestershire sauce
1 egg
1 egg yolk
*you may use a small amount of beer or cider to lengthen this mixture
*you will need to source 4-6 slices of bread for this dish to make the toast, make sure the loaf is quite large to use all of the mixture, we love Basket Range Baker sour dough.

technique
put the gourmet shred into a pan and add the milk, start using a spoon to gently mix these together
slowly melt them together over a low heat (do not allow the mix to boil as this will separate the cheese)
when the mixture is smooth and just begins to bubble, add the flour, breadcrumbs and mustard and cook for a few minutes, continue stirring, over a low heat until the mixture begins to form a ball shape.
add the Worchershire sauce, salt and pepper and leave to cool.
when cold, place mixture into a food processor, turn on motor and slowly add the egg and egg yolk.
*if you don’t have a mixer, just mix vigorously with a wooden spoon
after it has rested in the fridge, you will find the rarebit is very easy to handle.
use it to make cheese on toast

Plating up | Place your Rarebit on a wooden board, a side of chutney, and some chopped heirloom apples.
Top Tip | Use as a topping for baked fish, grill until bubbling.
