ALEXANDRINA WHITE CHRISTMAS
The definition of a white Christmas is when there is snow on the ground, and with the cold Spring we are having, it seems fitting to prepare for a cooler Christmas here in South Australia. Whether or not Christmas is sweltering or mild, there is one slice we always have in our family house, and that is White Christmas. This recipe is made with ten ingredients, and we love to use local apricots, sultanas, almonds – for that old fashioned, old Australian taste. Treat friends to this moreish slice during the Australian Summer, and remember special moments of a by-gone era. Calcium Hero of the Dish | Alexandrina Crème Fraiche
Alexandrina's Creme Fraiche is a naturally matured, thickened soured cream using culture. It has a light and lemony taste, and goes well with both savoury and sweet foods as a condiment. Crème Fraiche is made by adding a culture (special bacteria) to and fermenting our fresh Pure Jersey Cream. It has a subtle tangy, slightly nutty flavour and rich, velvety texture. 30 % minimum fat | available in 500 ml tub.

Top Tip | Melted white chocolate would be a fantastic addition to dress the top of the White Christmas, and we use fancy coloured Sprinkles to dress the slice.
Foodie Fact | These must be stored in the refrigerator, so we suggest labelling these with a Sticker that indicates ‘Store in the refrigerator.
Looking for Creme Fraiche? | It's not a tradition to add Creme Fraiche as an ingredient to White Christmas but this addition, gives this slice so much flavour and creaminess, its a must have addition to this slice.
Looking for Apricots? | We use Travallie Orchards Dried Apricots for this slice. It's very hard to just eat one of these Dried Apricots, and even harder if you have small people helping you! I noticed the bag in my basket has reduced somewhat since the weekend, when I was recipe testing - so even the Man of the House must have taken advantage of the Dried Apricots surfacing from the hidden pantry location! They don't last long in our house, and we recommend you find their online store, quick smart!
Trevallie Orchard is a family owned orchard located at Angaston in the heart of the Barossa Valley. Like the vineyards of the region, Trevallie's history is steeped in tradition with our first trees planted over 50 years ago. Our aim is to simply provide our customers with a product that has flavour and intensity, and one which truly reflects our efforts as an orchardist in one of the world’s most famous regions. Trevallie Orchard is a specialist in fresh and dried fruit with particular focus on dried apricots and pears. All of our fruit is grown, cut, dried and packaged on site. Our apricots and peaches are generally picked in December and our apples and pears in February and March.
Looking for Macadamia ? | We use Australian Macadamia nuts sourced from Honest to Goodness
Looking for Sultanas? | We use Sultanas sourced from Roy Farms in Renmark, South Australia. Krystyna's mother Cathe was born in Winkee, SA so we naturally love to support the Riverland growers throughout the year. Conveniently, Michael and his family have an online shop and can post you the fruit. Another opportunity to stock your pantry with locally grown Australian dried fruit.
Looking for Almonds? | We source our almonds from Taronga Almonds, delicious locally grown almonds from the stunning Fleurieu Peninsula region of South Australia.
Looking for Glaced Cherries? | We would love to find a local supplier of these for next year. These were just the supermarket brand, but so essential in the Christmas pantry and so delicious!
Easy does it - we hope you can try this recipe.
