They are often topped with a creamy gin-and-lime icing for a tangy, refreshing afternoon treat. This recipe was hand written and given to us, by Josephine Voysey, our guest recipe contributor from Adelaide, South Australia.

JOSEPHINE'S LIME & GIN CUPCAKES - using Alexandrina Milk
Autumn Recipe Series
Preheat oven to 180C
Bake for 15-20 minutes
Makes 12 cupcakes

Cupcakes:
1 1/2 cups plain flour, sifted
3/4 cup caster sugar
1/2 teaspoon salt
1/2 teaspoon baking powder
125 g butter (Josephine says at room temperature)
2 eggs, lightly beaten
1/4 cup Alexandrina's Full Cream Pure Jersey Milk
2 tablespoons of South Australian gin
juice and zest of 1 lime
Icing:
100 g of butter (Josephine says at room temperature)
2 1/4 cups icing sugar, sifted
2 tablespoons of South Australian gin
1-2 tablespoons of lime juice

In the bowl of a stand mixer (or in a large bowl with a hand mixer) beat the butter and sugar until light and fluffy.
Reduce the speed of the mixer, and add lime juice, lime zest, milk and gin.
Add half of the beaten eggs, and mix until just incorporated.
Mix in the remaining egg and mix for another minute or two.
Using a large spatula, gently fold in the flour, salt, and baking powder, until the batter is just combined.
Distribute the batter in to a lined muffin tray and bake for 15-20 minutes.
While the cakes are cooling start the icing;
Beat the icing sugar and butter until creamy, then add the rest of the ingredients, and beat on high until the icing reaches the desired consistency.
Once the cakes have cooled completely, spread or pipe the icing on the top. Place a thin wedge of lime on top if desired, to serve.
