Alexandrina Beetroot and Walnut Salad with Alexandrina Feta

Our Beetroot, Walnut & Feta salad is a wonderful light salad or side dish. With fresh rocket, chunks of beetroot, walnuts and local Alexandrina Feta cheese,it's flavourful, bright, and satisfying.

 

BEETROOT AND WALNUT SALAD WITH ALEXANDRINA FETA

 

Alexandrina Beetroot and Walnut Salad with Alexandrina Feta

 

Groundwork, 10-15 minutes preparation time

 

Elements

 

For the Salad

 

150 g Alexandrina Fleurieu Feta, cut into medium sized cubes

200 g Rocket (equivalent to four good handfuls of rocket)

3 medium beetroots, cut into quarters or medium sized cubes

65 g King Valley Walnuts (try to find Australian Walnuts if possible)

 

For the Dressing  

 

1 Tablespoons of olive oil

1 Tablespoon of Illalangi Wattleseed Caramelised Balsamic Vinegar

2 cloves of garlic, crushed

 

Lightly sprinkle with Salt & Pepper

 

Petal & Green Microgreens for garnish 

 

Technique

 

For the Salad –

place rocket into a serving bowl

prepare Feta using a clean chopping board, and knife, once cut into cubes.

afterwards place feta on top of the rocket into the serving bowl

prepare beetroot using a separate clean chopping board, and knife,

afterwards place cubes of beetroot on top of the rocket into the serving bowl

we suggest sprinkling the walnuts on top before serving, and we like to use local microgreens to decorate the top of the salad.

 

For the Dressing - in a small bowl or glass jar mix together olive oil, balsamic vinegar and crushed garlic.

 

serve immediately with salad servers, and remember that left over salad can be used in your weekday lunch box!

Alexandrina's Fleurieu Feta is a light and creamy cow’s milk feta matured in brine. This cheese is made with Skim Jersey Milk which has less than 14.5 % fat. This cheese has creamy zing - it is a firm cutting, versatile feta cheese that can be cubed and tossed through a green salad, or combined with spinach in a crusted pie, or served on an antipasto platter. Serve this cheese | on a platter with kalamata olives, dolmades and pickled octopus. 14.5 % minimum fat | available in various weighted wedges vacuum packed, also available in 500g, 1kg, 3kg tubs.

Another Top Tip | If you prefer to use The Figgery Sticky Fig Syrup instead of Balsamic Vinegar you won’t reget it – or use a bit of both.
