Alexandrina Beetroot and Walnut Salad with Alexandrina Feta

Groundwork, 10-15 minutes preparation time

For the Salad

150 g Alexandrina Fleurieu Feta, cut into medium sized cubes

200 g Rocket (equivalent to four good handfuls of rocket)

3 medium beetroots, cut into quarters or medium sized cubes

65 g King Valley Walnuts (try to find Australian Walnuts if possible)

For the Dressing

1 Tablespoons of olive oil

1 Tablespoon of Illalangi Wattleseed Caramelised Balsamic Vinegar

2 cloves of garlic, crushed

Lightly sprinkle with Salt & Pepper

Petal & Green Microgreens for garnish

For the Salad –

place rocket into a serving bowl

prepare Feta using a clean chopping board, and knife, once cut into cubes.

afterwards place feta on top of the rocket into the serving bowl

prepare beetroot using a separate clean chopping board, and knife,

afterwards place cubes of beetroot on top of the rocket into the serving bowl

we suggest sprinkling the walnuts on top before serving, and we like to use local microgreens to decorate the top of the salad.

For the Dressing - in a small bowl or glass jar mix together olive oil, balsamic vinegar and crushed garlic.

serve immediately with salad servers, and remember that left over salad can be used in your weekday lunch box!

Top Tip | Illalangi Wattleseed Caramelised Balsamic Vinegar is a family favourite, and once you have been treated to this product, your pantry or your table won’t survive without it.

Foodie Fact | We also love to use our Alexandrina Feta on our Roast Pumpkin, Spinach and Fleurieu Feta Salad, which can be found in our Summer Series eCookbook Please note there is a typo on this recipe and instead of 5g of Feta we suggest 125 g of Feta. Countless people have emailed me to tell me about the mistake, and I appreciate everyone’s help with this matter.

Another Top Tip | If you prefer to use The Figgery Sticky Fig Syrup instead of Balsamic Vinegar you won’t reget it – or use a bit of both.
