Our Fennel, Pear & Romano salad is a wonderful light salad or side dish. With finely sliced fennel bulb, wafer thin green pear, and local Alexandrina Romano cheese, it's flavourful, bright, and satisfying.
SHAVED FENNEL, GREEN PEAR AND ROMANO SALAD
Alexandrina Shaved Fennel, Green Pear and Alexandrina Finniss River Romano Salad
Groundwork, 15 minutes preparation time
Elements
For the Salad
75 g Alexandrina Finniss River Romano, shaved with a peeler
2 medium fennel bulbs, finely sliced
2 green pears, unpeeled, halved, cored and finely sliced
For the Dressing
1 Tablespoon of olive oil
1 Tablespoon of lemon juice
1 Tablespoon of grated lemon zest
1 Tablespoon flat leaf parsley, chopped
Salt & Pepper
Petal & Green Microgreens for garnish
Technique
For the Salad - prepare all salad ingredients using a clean chopping board, mandoline and knife
medium fennel bulbs, use madoline to slice finely, place into the serving
halve and core the green pears, use madoline to slice finely, also place into the serving
we suggest shaving the Romano with a peeler
use local microgreens to decorate the top
For the Dressing - in a small bowl or glass jar mix together olive oil, lemon juice, grated lemon zest, and flat leaf parsley
serve immediately with salad servers, and remember that left over salad can be used in your weekday lunch box!

Top Tip | There are a couple of different ways to shave fennel and pear without a mandoline. You can use a vegetable peeler, a cheese planer, a knife or a food processor.
