Alexandrina Beetroot Soup – served with Alexandrina Crème Fraîche
Alexandrina Winter Soup Series
ALEXANDRINA BEETROOT SOUP – SERVED WITH ALEXANDRINA CRÈME FRAÎCHE
Our Beetroot Soup is earthy, bright, sweet and fresh, and just a little more tangy due to the swirl of Alexandrina Crème Fraiche added to the bowl when served. Serve this soup on any autumn weekend, but try to fill your table with loads of pastries or pierogi filled with minced meat, vegetables and cheese, and some freshly baked sour dough, slathered in butter.
Serves 4-6
ELEMENTS
4 tablespoons of butter
600 g beetroot, chopped (optional beets can be roasted and cool)
200 g carrots, peeled & chopped
200 g potatoes, peeled & chopped
30 g garlic, crushed
30 ml fish sauce (2 teaspoons)
30 g Newman’s Horseradish Farm Horseradish (1-2 teaspoons)
At least 500 ml of water (not stock)
Salt, Pepper
to serve
~125ml Alexandrina Crème Fraîche (1/2 cup)
extras
pistachio nuts; lime or lemon juice * optional
TECHNIQUE
The aim of this recipe is to prepare each of the ingredients, before assembling all of the ingredients of this soup into a slower cooker (or use a heavy based saucepan).
Firstly, sauté the butter, beetroot, carrots, and potatoes to develop caramelisation which is essential to build flavour in the slow-cooker.
To the slow cooker, add beetroot, carrots, potatoes as well as garlic, fish sauce, horseradish, and water.
Mix all the ingredients together, and set to cook for 4 hours, depending on the settings on your slow cooker.
To finish this soup, use a stick blender to blend the soup into a smooth consistency.
Season to taste with salt and pepper
Serve in a bowl with a large dollop of Alexandrina Crème Fraîche.
You can also sprinkle with pistachio nuts, and a squeeze of lime or lemon juice.
