ALEXANDRINA ZUCCHINI AND POTATO SOUP – SERVED WITH ALEXANDRINA CRÈME FRAÎCHE

Inexpensive, filling and delicious! This Zucchini and Potato Soup – served with a dollop of Alexandrina Crème Fraîche is not complete until you have a light shaving on James Flat Pepato on top.

Zucchini is one of the most popular summer vegetables to grow and enjoy, it is almost time to prepare your raised beds and get those seed starts going, we can hardly wait until the soil is warm enough to get growing this homestead essential. But brace yourself for the harvest, those zucchini just keep on coming!

Another humorous story I once enthusiastically sowed twelve zucchini plants for a family of four, two adults and two teenagers, we had enough zucchini in our garden to feed a small army! I like to cook this soup in the peak of zucchini season and tuck it away in the freezer for the start of winter. Equally convenient to pop in the slow cooker for a weeknight meal, and excellent for filling-bellies on those busy weekends too.

Serves 4-6

ELEMENTS

600 g zucchini, chopped (3 medium sized zucchini)

300 g potatoes, chopped (3-4 medium sized potatoes)

1 onion, firstly finely sliced, then finally chopped and fried

60 g garlic, crushed (3-4 medium sized cloves)

400 ml of good quality stock

salt, pepper

 

to serve

~125ml Alexandrina Crème Fraîche (1/2 cup)

~125ml Alexandrina Grated Pepato (1/2 cup)

 

TECHNIQUE

The aim of this recipe is to prepare each of the ingredients, before assembling all of the ingredients of this soup into a slower cooker (or medium sized saucepan).

To the slow cooker, add all the ingredients, except the stock.

Use saute option to fry onion, zucchini, potato & garlic.

Mix all the ingredients together, and set to cook for 3-4 hours, depending on the settings on your slow cooker.

To finish this soup use a stick blender to blend the soup into a smooth consistency.

Season to taste with salt and pepper

Serve in a bowl with a large dollop of Alexandrina Crème Fraîche, and tablespoon of Alexandrina Grated Pepato.
