Alexandrina Cheesy Garlicky Cob

Alexandrina Winter Snack Series


This will take you back to the 90’s, and it is one of those recipes to pull out of the oven on Saturday night when the football game is starting – it will really get the party started. This warm cob, filled with Alexandrina Edam is perfect for gatherings, but just don’t expect any leftovers. Prepare at least two, one for the weekend, and one for the freezer!

ALEXANDRINA CHEESY GARLICKY COB

Serves 4-6

200-250 g Alexandrina Encounter Bay Edam, grated
1 medium cob loaf
100g butter, room temperature
4 cloves of garlic, minced
¼ teaspoon oregano (or any fine dried or finally chopped fresh herb you prefer)

technique

preheat oven to 180 degrees Celsius

prepare the butter mixture:

Into a small bowl, crush the garlic, add the room temperature butter, add the oregano; mix thoroughly.

prepare the cob loaf:
take your cob loaf, and with a good quality bread knife cut a pattern into the top of the bread.

the aim is to create a crosshatch pattern, by slicing 2 centimetre grid lines into the loaf, but not taking the knife all the way through.

you need to leave at least 1 cm from the bottom of the loaf so that it holds together.

fill the cob loaf with butter mixture:

separate the bread with your fingers, and scoop the butter mixture into all of the cut edges, and use up all of the butter mixture by wiping as much as you can into the cob loaf.

first bake of the cob loaf:
wrap the cob loaf up in foil and place in the oven and bake for 10 minutes.

remove the cob loaf from the oven.
after this increase the oven temperature to 200 degrees Celsius

second bake of the cob loaf:
allow your cob to cool for 1-2 minutes, and then sprinkle the Edam cheese into the edges and over the top of the cob loaf.
leave the foil open and return to the oven for a further 10 minutes until warmed through and bubbling.

serve immediately on a wooden board, and provide a bread knife to help with portioning.

Top Tip - Alexandrina Cheesy Garlicky Cob can be frozen for up to a month, to prevent freezer burn use an airtight container, and wrap in alfoil before oven baking.

For Best Results - put the wrapped up cob loaf on the baking stone in a hot oven

We recommend a wine match to either a crisp white wine or a saucy summer rose. Serve this cheese | on a platter with almonds, sundried apricots and celery greens. 27.2 % minimum fat | available in a 1kg ball or 2 kg ball, or various weighted wedges vacuum packed.
