Alexandrina Fresh Cheddar Curd and Cherry Salad with Sticky Fig Dressing

A fresh crunchy salad with succulent local cherries, delivers perfectly balanced texture and flavour, the sticky fig dressing adds a burst of sweetness, and the squeaky and salty Fresh Cheddar Curd adds a unique local touch to this Christmas showstopper. This salad will show off your inner festive cheer, serve at your next gathering to impress those who love to eat something local.

 

ALEXANDRINA FRESH CHEDDAR CURD AND CHERRY SALAD WITH STICKY FIG DRESSING

 

Groundwork, 25 minutes, plus 3 minutes cooking Fresh Cheddar Curd

 

Elements

 

For the Curd and Cherry Salad

125 gm Alexandrina Fresh Cheddar Curd, for frying

1 red onion, small, finely sliced in half, then long ways

120 g leaf salad – a mix of green and red leaves

150 g snow peas, sliced diagonally 5ml width

150 g sugar snap peas, topped and tailed

250 g baby cucumbers, sliced diagonally 5ml width

250 g cherry tomatoes, cut in half

300 g cherries, stalks off and pitted (keep chilled until serving)  

 

For the Sticky Fig Dressing

1 lemon, juice only

50 ml The Figgery Original Sticky Fig Syrup

50 ml The Figgery Original Sticky Fig Dressing

 

Mint for garnish (optional)

 

Technique

 

place a small bowl in the centre of a large white platter

prepare all salad ingredients with a chopping board and knife

lay the leaf salad in a wreath shape, add the snow peas, sugar snap peas, baby cucumbers, cherry tomatoes

in a small bowl 1 lemon, juice only, sticky fig syrup and sticky fig dressing

then slice the red onion, small, finely sliced in half, then long ways

add the red onion to the dressing to neutralize, this will tame the pungent taste of raw onion

set the onion and dressing aside until the end of the preparations

gently fry the Fresh Cheddar Curd until light-brown and slightly warm,

first this step take care that the pan stays on low, and you turn the curd over quickly and often using a pair of tongs.

allow the curd to cool on a paper towel

just before serving, drizzle the onion and dressing,  

to finish add the curd and cherries

 

serve immediately with salad servers, and remember that left over salad can be used in your weekday lunch box!

Alexandrina's Fresh Cheddar Curd is simply a fresh, unmatured curd of the Cheddar cheese. This cheese is made in an open-vat using a traditional Cheddaring method, whereby the Cheddar Curd is stretched, milled and salted before being pressed in a special hoop. Alexandrina’s Cheddar Curd has a pleasant mild, salty and savoury flavour, with a unique squeaky texture. Not only is Cheddar a cheese name, the term “cheddaring” describes the stretching step in production, where the large slabs of fresh curd are cut and stacked, and regularly hand-turned, to ensure maximum extraction of whey and even-development of acidity. Alexandrina Cheese are among only a handful of Cheddar producers in Australia today who include this important Cheddaring process. SERVE THIS CHEESE | on a platter with any locally sourced accompaniment, or fry on a low-heat as you would fry a halloumi-style cheese. You can also use Alexandrina's Fresh Cheddar Curd to make Poutine, a Canadian dish of french fries and cheese curds topped with a brown gravy. 33.8 % minimum fat | available in 250g or 500g bag.
