Jeff’s Oatmeal Brownie Biscuits

JEFF’S OATMEAL BROWNIE BISCUITS

1 cup packed brown sugar

120 grams butter

1 egg

½  teaspoon vanilla

1¼ cups plain flour

½ teaspoon bi-carb soda

¼ teaspoon salt

1½ cups rolled oats

 

180 grams unsweetened chocolate buttons

200 ml Alexandrina Pure Jersey Cream*

1 tablespoon butter

½ - ¾ cup chopped nuts

½ teaspoon vanilla

 

23 cm X 23 cm baking pan or equivalent

Jeff says * The original recipe called for sweetened condensed milk, but this cream makes the biscuits richer and not too sweet.  There’s enough sweetness in the brown sugar.

Preheat oven to 180º and butter the bottom and sides of the baking pan.

In a mixing bowl combine brown sugar, 120 grams butter, egg and ½  teaspoon vanilla.

Add flour, bi-carb, salt and oats.  Start mixing with a spatula, but you’ll probably end up using your hands and squeezing bits through your fists until you have a nice, even dough.

Line the bottom of the baking pan with the oatmeal dough about 1 cm thick.  So, start with half and use up to two thirds of the oatmeal dough to pave the baking pan wall to wall.  Even it out with a small rolling pin or jar.

Melt the chocolate, Alexandrina Pure Jersey Cream and tablespoon of butter together by stirring over low heat in a saucepan.  Stir in the nuts and ½ teaspoon vanilla.  Pour it over the oatmeal lining the baking pan and smooth it out.

With the remaining oatmeal dough, take about 1 tablespoon at a time into your hands, roll it and then press it into a disk between your palms about half as thick as the bottom layer.  Place the disks on top of the chocolate mix (if the disks are around the same size and you place them like naughts in a game grid of naughts and crosses, then later you’ll be able to cut the biscuits between the disks and each biscuit will have a square oatmeal bottom and round oatmeal top; note that you’ll likely have more than nine naughts in this game).

Pop the baking dish into the oven and bake for about 25 minutes.  You’ll want to be sure that the bottom oatmeal layer is cooked through, and the best guess for that is when the top oatmeal is brown, but not burnt.

Remove from oven to cool.  While the biscuits are warm, you can cut individual biscuits (make sure to cut all the way through the bottom layer).  There should be no problem cutting between the disks and, if you’re careful and want to, across the disks, as well.

If the bottom layer was not baked through, then bake longer next time.  If the disks are burnt or the bottom layer is not soft, then bake shorter next time.
