Alexandrina Meatzza
At our place in around August 2019, our Babcia Krystyna first experimented with serving our family a low carb Meatzza, and since then it has been a tradition, so we call it a cross between a meatloaf and a pizza. We think it’s a nice easy meal, and takes only around ten minutes to prep! Yes, the crust is made just from meat, and we layer with simple toppings and lashings of Alexandrina Cheese.

ALEXANDRINA MEATZZA
Serves 4-6
Groundwork, 10 minutes to prepare, 15-20 minutes to bake in the oven
ELEMENTS
- 500 gm mince * options are numerous (but we often use Gum Park Pork Mince)
- 50-100g tomato paste *you can use more or less depending on your family preference
- 50-100g Alexandrina Fresh Jersey Ricotta * optional
- 1 egg
- 1 teaspoon chilli powder * optional
- salt & pepper
Additional Toppings
250 g Alexandrina Gourmet Shred
additional 50-100g tomato paste *you can use more or less depending on your family preference
12 slices of fresh tomato
50 g capsicum sliced if you have these on hand
50g olives slices if you have these on hand
12 slices of pepperoni or cured meat (we love to use San Jose Smallgoods)
12 fresh basil leaves if in season
50 – 100 g Alexandrina Finniss River Romano
TECHNIQUE
preheat oven to 200C
- to the mince, add Alexandrina Fresh Jersey Ricotta, egg, chilli powder, salt and pepper and mix together
- once combined, grab a pizza tray or a round crockery dish, and press the mince mixture into the pan, and spread it out to the edges as evenly as possible.
- please note that this meatzza may shrink in the oven, and so don’t be surprised if there is a little moisture around the pan too. You will need to drain the excess fluid and press the edges dry with paper towel. Be careful to use oven mits and don’t burn yourself.
- on the uncooked mince, spread the tomato paste evenly, then arrange the pepperoni or curd meat, then arrange the tomato slices, and other meatzza toppings like sliced capsicum, and slice olives.
- finally spread the Alexandrina Gourmet Shred all over the meatzza!
- cook this meatzza on 200 C for 15-20 minutes
- serve with basil leaves and freshly grated Alexandrina Finniss River Romano
- serve with a late-Autumn or Winter smile

Alexandrina’s Gourmet Shred is blended by our cheesemaker, it consists of four shredded cheeses including Edam, Gouda, Cheddar and Romano. Gourmet Shred has a tangy and medium bodied profile, but also a mellow sweetness. Gourmet Shred is conveniently used for melting, mixing or grilling, but can be used as a topping. When heated it has an elastic and stretchy texture, it has strong savoury flavour, and gives a beautiful aroma to your meal.

Alexandrina's Finniss River Romano is a piquant infused pecorino-style cheese, aged for over 24 months. This handmade cheese has an extraordinary pleasant taste and texture. It lingers long on the palate, with a delightful aroma and visual appeal. Match with red wine varietal. Serve this cheese | on a platter with pinenuts, sundried tomatoes and green olives. It is also versatile shaved on top of savoury dishes with basil, roast tomatoes and garlic. 27.9 % minimum fat | available in a 10kg wheel, or various weighted wedges vacuum packed.

Top Tip | I think making burger sized meatzza’s, and perhaps using a muffin or silicon muffin tray would be a treat for lunch or weekend meal.
