Alexandrina Lunch Box Series
Rolling out our Alexandrina Nachos, and the hero of this lunch box is our Alexandrina Gourmet Shred, but honestly you could use any of the Alexandrina Cheeses for this recipe.

Our Alexandrina Nachos are loaded with all the toppings and flavours we love, this is one healthy lunch that tastes like you are indulging but it is totally good for you and your family members. It is also a good way for the kids to eat more protein and veggies, and that will make them want to clear their lunch box. This healthy Alexandrina Nachos lunch box comes together super fast with left over taco meat and fillings. We find that to get our kids onboard with lunch box preparations, it is essential that we find ways to make their favourite meals, with Alexandrina Gourmet Shred, they won't get bored with lunch boxes this year!
Groundwork – 10 minutes of preparation time
Serves 4 (it is so easy to change quantities for serving more)
For the Nachos
200 g (4 x 1/4 cup) Alexandrina Gourmet Shred, for best results serve the portion with tongs or a spoon
200 g (4 x 1/4 cup) Black Beans (note - usually cans are around 400 g – use half a can)
200 g (4 x 1/4 cup) Taco Mince Meat, chilled (*left overs from dinner is perfect solution)
200 g (4 x 1/4 cup) Corn Kernals (note - usually cans are around 400 g – use half a can)
200 g (4 x 1/4 cup) Cherry Tomatoes, diced
200 g (4 x 1/4 cup) Red Capsicum, diced
200 g (4 x 1/4 cup) Cucumber, diced
200 g (4 x 1/4 cup) Avocado, diced
200 g (4 x 1/4 cup) Tortilla Chips (scoop shaped chips work best)
Optional – a dollop for each lunch box of Alexandrina Crème Fraiche (* if you are eating this at home)

The idea for this is the ingredients will be assembled separately, and the nachos lunchbox can be eaten at school or work, with both scoop shaped chips and it might be handy to add a fork or a spoon.
place each of the ingredients separately in four bento style boxes, and shut the lid of the lunch box , then refrigerate all the items overnight, except for the Tortilla Chips they need to be kept as dry as possible to prevent becoming soggy. *alternatively you may serve all ingredients in layers in a lunchbox with an ice brick. *cutlery – set a reminder before the lunchbox leaves the house!

TOP TIP | It is my aim this year to laminate this recipe to stick on the fridge, so that I can empower my children, and quite possibly my husband to abandon the sandwich at least one day a week. Everyone LOVES nachos, so it’s going to be a family favourite in no time, and so quick and easy.
