Pumpkin, Bacon and Apple Soup – served with Alexandrina Crème Fraîche
Alexandrina Winter Soup Series
My Dad Dan with the help of my Babica & Dziadek once grew 900 pumpkins in one of our cow paddocks, here at Mt Jagged !– true story! We sold the pumpkins on the side of the road, in a wooden pallet box with a Honesty Box for the coins. It was around 1991, and one of the best parts about this season was the enormous saucepans of pumpkin soup my Mum would make for us kids! I am fairly sure we didn't care for pumpkins much after that experiment!!
Honestly, nothing beats a Pumpkin Soup in the middle of winter, and we add bacon and apple to our soup, it’s delicious served with Alexandrina Creme Fraiche.
Over the years, especially when standing under-the-tent at our local farmers market, we have been blessed to have many of our loyal customers share their recipes with us. Recipe sharing comes in all forms, best usually written on a scrap piece of paper or a tatty envelope, we even have had customers spend time typing up their recipes and emailing them to our cheese factory desk. Many of our customers are just so passionate about their recipe, and they want to us to know how much better it tastes when Alexandrina products are in the mixture.
In this edition We share our Pumpkin, Bacon and Apple Soup – served with Alexandrina Crème Fraîche – it is a soup that is always well received by family members or guests to your table.
ALEXANDRINA PUMPKIN, BACON AND APPLE SOUP – SERVED WITH ALEXANDRINA CRÈME FRAÎCHE
Serves 4-6
ELEMENTS
600 g pumpkin, chopped (optional roasted and cool)
2-3 rashers of good quality bacon, chopped and fried
1 onion, firstly finely sliced, then finally chopped and fried
2-3 apples, coarsely chopped
30 g garlic, crushed
30 g ginger, finally chopped or grated
30 ml lemon juice
400 ml of good quality stock
salt, pepper
to serve
~125ml Alexandrina Crème Fraîche (roughly a tablespoon per bowl)
The aim of this recipe is to prepare each of the ingredients, before assembling all of the ingredients into a slower cooker (or you may use a saucepan).
TECHNIQUE
Firstly, fry bacon and onion and allow to cool.
To the slow cooker, add pumpkin, bacon, onion, apples, garlic, ginger, lemon juice and stock.
Mix all the ingredients together, and set to cook for 4 hours, depending on the settings on your slow cooker.
To finish this soup use a stick blender to blend the soup into a smooth consistency.
Season to taste with salt and pepper
Serve in a bowl with a large dollop of Alexandrina Crème Fraîche.
