Alexandrina Gouda Paprika Wedges with Speedy Bean Soup

Golden brown, super crunchy, perfectly seasoned potato wedges are the perfect accompaniment to any hearty soup, but add some of Alexandrina’s grated Mount Magnificent Gouda cheese over the wedges and you are in for a flavour bomb!
This is the perfect winter combination, especially when you want to reach for ingredients you have on hand, and makes for a brilliant, Saturday night in.
ALEXANDRINA GOUDA PAPRIKA WEDGES WITH SPEEDY BEAN SOUP
makes 4 serves

Soup
1x 400g g can of four bean mix (or baked beans) (*optional use dried beans, and precook)
400 g can of diced tomatoes
2 tablespoons of olive oil
1 tablespoons Worcestershire sauce
1 onion, finely chopped
100 g bacon, chopped (*you can use up to 300g) For this recipe we actually used Proscuitto from San José Smallgoods)
3 cloves of garlic, crushed
350 ml stock (* or water)
Cheesy wedges
150g Alexandrina Mount Magnificent Gouda, grated
3 potatoes, large size
2 tablespoons of olive oil
1 tsp sweet smokey paprika (For this recipe we actually used Herbie's Spices)
salt and pepper,
100 g baby spinach, (or use kale)
4 tablespoons of Alexandrina Crème Fraiche
preheat oven to 180 C
technique
- to make the wedges, cut each potato into 6 wedges
- combine the oil and paprika in a bowl, and season well with salt and pepper
- toss in the wedges, then transfer to a baking dish and bake for 30-40 minutes
- meanwhile, start the soup by heating the olive oil in a large saucepan, add onion and bacon and cook over medium heat for 5 minutes, stirring occasionally, then add garlic and cook for a further 3 minutes. Add the beans, tomatoes, stock and Worchestershire sauce, stir to combine, then bring to the boil.
- reduce heat to low and simmer, stirring occasionally for 15 minutes
- scatter the sliced or grated Mount Magnificent Gouda cheese over the wedges and bake for a further 10 minutes.
- serve the soup in a bowl, top with baby spinach leaves and a dollop of crème fraiche. serve the wedges on a plate.

It has a smooth supple texture for slicing. We recommend a crisp white wine or a local ale to complement the creamy taste in the cheese. Serve this cheese | on a platter with red pears, pecan nuts, and thompson seedless grapes. 27.2 % minimum fat | available in a 3-4 kg wheel, or various weighted wedges vacuum packed.

Plating up | This soup works well served in a large mug, sit the mug on a plate, and serve the wedges on the side.
