Very Juicy Alexandrina Apple Torte

Let us celebrate the new season with this lovely cake, and enjoy a slice of Very Juicy Apple Torte. This recipe, using Alexandrina’s traditional Fresh Jersey Ricotta. Our beautiful ricotta is made with whey from our cheese making process, Jersey milk, and lemon juice. You must not forget the tub of Pure Jersey Cream, if you are taking this cake into work for morning tea. Our Very Juicy Apple Torte is wonderful to share with friends’ next weekend, and a couple of pieces may even last into the middle of the week for a treat after dinner.
This was the very first recipe we shared at the Willunga Farmers Market back in the early 2000's, and it also featured on one of our very first eNewsletters in the early 2000’s.
ALEXANDRINA VERY JUICY APPLE TORTE
Serves 4
Groundwork – allow 25 minutes preparation time + 60 minutes in oven
elements for the base:
300 gm self raising flour
150g butter
150 g sugar
1 egg
ingredients for the apple filling:
500 gm apples peeled & sliced *we sometimes don’t peel
1 tablespoon sugar
1 teaspoon vanilla
1⁄4 teaspoon cinnamon
ingredients for the ricotta filling:
500gm Alexandrina Traditional Fresh Jersey Ricotta
3 eggs
rind of lemon
100g sugar
40 g semolina
40 g ground almonds *we use Taronga Almonds
1 x 300 ml Alexandrina Pure Jersey Cream for serving
technique for this base:
rub butter into flour until mixture resembles bread-crumbs
add sugar and egg, mixing well
spread two-thirds of the mixture into a greased spring form pan
technique for this apple filling:
place the sliced apples, sugar, cinnamon and vanilla into a saucepan and simmer until apples are tender, approximately five minutes.
allow to cool
technique for this ricotta filling:
beat eggs and 100g sugar until foamy
add lemon rind, ricotta cheese and semolina
Strain any excess juice from apples and spread on top of crumb base
top with ricotta mixture
sprinkle remaining flour mixture over the top of the pie
bake at 180 C for approximately 1 hour
turn off oven and allow torte to cool in oven or on the bench before serving
serve with Alexandrina Pure Jersey Cream
CALCIUM HERO OF THE DISH | ALEXANDRINA FRESH JERSEY RICOTTA
Alexandrina's Fresh Jersey Ricotta is made with a mixture of whey and Alexandrina’s Full Cream Jersey milk. Ricotta in Italian means ‘re-cooked’, it evolved from the ‘whey’ left from the making of cheese. Fresh Jersey Ricotta is a mass of creamy-white, fine and moist grains, and is firm in texture - not too wet, nor too solid. A small round wheel is made that looks like an upturned basin, with a patterned surface, the result of being drained in a colander then placed in a small tub. Fresh Jersey Ricotta is delicately lemony, mild and milky, with a slightly sweet, eggy flavour and has a fresh aroma. Fresh Jersey Ricotta is full of fresh protein. It is best eaten fresh, suitable for spreading or it can be used as a filling or for baking. 8.7 % minimum fat | available in 500 g tub.

TOP TIP | For other rustic fruit tortes, choose between all the of the fruits of the forest, including blueberries, raspberries, strawberries, cherries and blackberries, but don’t forget all the different varieties of apples and pears available in the autumn and winter. Once you have the technique down-pat – you creative alternatives will offer you the chance to mix and match flavours, and this will become a staple in your house from now on.
