Mushrooms on Toast with Alexandrina Crème Fraîche and thyme

Earthy mushrooms are the star of the show, in this quick brunch dish. Once cooked the mushrooms are pungent and creamy, so soul warming and satisfying for a seasonal lunch or easy weeknight dinner – Mushrooms on Toast with Alexandrina Crème Fraiche and thyme tastes magic, but so achievable and simple. 


Serves 4

groundwork – allow 15 minutes preparation time


1 teaspoon of Alexandrina Crème Fraîche to grease the pan

100ml Alexandrina Crème Fraîche (approx 2/3 cup)

450g mushrooms *any variety – we used Swiss Brown, Medium White Button Mushrooms

60 ml of white wine 

1 teaspoon of fresh thyme leaves

3 cloves garlic, peeled and ready to squeeze into the garlic press

4 – 8 slices of toast *we used a brown loaf from the bakery, you can use sourdough or anything bread you wish to use

cracked black pepper


rub the slices of toast with one garlic clove, and lay onto a chopping board to rest

in a fry pan, melt 1 teaspoon of Alexandrina Crème Fraîche in the pan, then add the mushrooms and cook for 4-5 minutes, stirring frequently, until tender

take the 3 garlic cloves and squeeze into the garlic press, and use a knife to portion the crushed garlic into the pan

add in the remaining Alexandrina Crème Fraîche, and pour in the wine, continue to cook, stir until thickened

turn the pan off, sprinkle with thyme, and serve immediately onto the toast, and sprinkle with cracked black pepper


Alexandrina's Creme Fraiche is a naturally matured, thickened soured cream using culture. It has a light and lemony taste, and goes well with both savoury and sweet foods as a condiment. Crème Fraiche is made by adding a culture (special bacteria) to and fermenting our fresh Pure Jersey Cream. Top Tip | Double the mushroom – why not try your luck at Vos's Creamy Mushroom Soup 
(serves 4) elements - 200 ml Alexandrina Pure Jersey Cream, 200 ml Alexandrina Creme Fraiche, 500g mushrooms sliced, 1/3 cup butter, 1 clove garlic minced, 6 shallots finely chopped, 1/3 cup flour, 1 litre beef stock (chicken or vegetable works as well), quarter bunch of chives finely chopped &
salt and pepper to taste
Creamy Mushroom Soup method - in a large saucepan ad butter and sauté sliced mushrooms, garlic and shallots for 8-10 minutes, reduce heat and Slowly stir in flour stir for 2 minutes to cook the flour, remove pan from the heat. In a separate pan bring stock to a boil turn off heat, return mushroom saucepan to medium heat gradually add stock to mushroom mixture stirring constantly, 2-3 minutes until mixture bubbles and starts to thicken, stir in creme fraiche and cream, stirring gently 4 minutes add salt and pepper to taste, place in bowls to serve and top with a dollop of Alexandrina Creme Fraiche and chopped chives.
